Nasturtiums certainly look pretty, but they can also make a delicious addition to your hors d’oeuvres repertoire. Try this tasty recipe for stuffed nasturtiums with nasturtiums.
- Cream Cheese- 8oz
- Chives (Finely Minced)- 2T
Combine cream cheese and chives. Stuff into nasturtium flowers. For an added touch, serve on a tray lined with nasturtium leaves.
Green Spring Rolls
Looking for a healthy lunch option? Try these spring rolls with lettuce!
- Arborio or Long Grain Rice- 1/2C
- Salt- 1T plus an additional 1/2t
- Ice Cubes- 4C
- Lettuce or Greens- 1 Head
- Shredded Carrot- 1C
- Finely Chopped Green Onion
- Snipped Parsley- 2T
- Sesame Oil- 1T
- Lime Zest- 1/4t
- Lime Juice- 2t
- Ground Black Pepper- 1/4t
- Soy or Teriyaki Sauce
Cook rice. Bring 12C water with 1T of salt to boil. Place ice in a bowl with 8C cold water and set aside. Place 8 outer leaves of lettuce or greens in boiling water until wilted, and then immediately place in cold water. Remove one at a time, set aside to dry. Finely chop 3 cups of remaining lettuce and combine with other ingredients to make filling.
Assemble rolls 1 hour prior to serving. Begin by squeezing excess water from filling. Then, lay your prepared leaves on the counter and fill each with 1/4 cup of filling. Roll up and place on a dish with the seam down. Let sit for an hour before serving. If you like, serve with teriyaki or soy sauce.
Sriracha Pulled Pork Jalapeno Poppers
It may still be summer, but it’s not too early to try this twist on a classic Superbowl snack. Purple jalapenos from make for a perfectly colorful touch!
- Jalapenos- 10 peppers
- Pulled Pork (prepared)- 10 oz
- Sriracha- 3 0z (plus extra for topping)
- Cheddar Cheese- 1/2 C
Preheat oven to 350. Slice jalapenos and scoop out insides, set aside for later. Mix sriracha and pulled pork, stuff into jalapenos. Top with cheese and bake for 20 minutes.
Strawberry Balsamic Chicken
Fresh basil kicks this delicious and oh-so-easy chicken up a notch. If you like, switch out the strawberries for tomatoes!
- Chicken- 4 Breasts
- Balsamic Vinegar- 4C
- Salt and Pepper
- Strawberries (Or Tomatoes)- 1 Pint
- Fresh Mozzarella- 4oz
- Fresh Basil- 1/4C
Marinate chicken breasts in 1/2 cup of balsamic vinegar, salt and pepper for five minutes to five hours. Preheat oven to 400F and when ready, bake chicken with the remaining vinegar for 30 minutes. Chop up strawberries, mozzarella, and basil and top the chicken.
